The Pieve a Salti Farm was founded in 1978. Since then its 700 hectares (approximately 1750 acres) set in the Senese hills have been cultivated using a rotation system of grains and animal feeds. The conversion to a system or organic cultivation began in 1998, at which time space was also allotted to organic vegetables. The farm, organic certified at the beginning of 1998, added finishing processes to the production chain. During 2002 a plant was completed for cleaning, cutting and packaging.
