In early spring it is already possible to see our Limousine cattle outside grazing in the fields alongside the horses from our stables. The herd is generally made up of 30 to 35 breeding cows and one Bull. The cattle graze for a period of 6 to 8 months depending upon grazing available and ultimately the weather conditions. The herd is usually outside from early spring until the first cold spell of autumn. The calves remain with their mothers until they are 6 or 7 months old, after which the female calves are separated until they are 18 to 20 months old. They then return to the herd. The male calves are fattened and their meat is used in the restaurant at Pieve a Salti.
